  • 3 carrots, roughly chopped

  • 2 tbsp coconut or olive oil

  • ½ tsp Himalayan pink salt

  • Freshly ground black pepper, to taste

  • 2-3 scallions (green and white parts), sliced. to garnlsh

  • Handful of fresh cilantro, to garnish 

  • Dressing

  • 2 tbsp apple cider vinegar

  • 2 tbsp sesame oil

  • 2 tbsp coconut aminos

  • 1 tbsp grated fresh ginger

  • ¼ tsp red pepper flakes

Directions
