Ingredients
-
1 cup Max Sweets Collagen Sugar-Free Marshmallows (choose any flavor you like)
-
2 cups rolled oats
-
1/2 cup mixed nuts (almonds, walnuts, pecans), roughly chopped
-
1/4 cup mixed seeds (pumpkin seeds, sunflower seeds, chia seeds)
-
1/4 cup unsweetened dried fruits (cranberries, raisins, or apricots), chopped
-
1/3 cup honey or agave syrup (for a vegan option)
-
1/4 cup coconut oil
-
1 teaspoon vanilla extract
-
1/2 teaspoon salt
Directions
Preheat the Oven: Set your oven to 350°F (175°C) and line a baking tray with parchment paper.
Toast Oats and Nuts: Spread the oats and nuts on the prepared tray and toast in the oven for 10-15 minutes, stirring occasionally, until they are lightly golden. Remove from the oven and let cool.
Prepare Marshmallow Mixture: In a large saucepan, melt the Max Sweets marshmallows with coconut oil over low heat. Stir continuously until the marshmallows are fully melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.
Mix Ingredients: In a large mixing bowl, combine the toasted oats and nuts, seeds, dried fruits, and salt. Pour the melted marshmallow mixture over the dry ingredients. Stir well to ensure everything is evenly coated.
Shape the Bars: Press the mixture firmly into a lined 8x8 inch (20x20 cm) square pan. Use a flat object like a spatula or the back of a cup to press down firmly and create an even layer.
Chill: Refrigerate the pan for at least 2 hours, or until the mixture is firm and set.
Cut and Serve: Lift the set mixture out of the pan using the edges of the parchment paper as handles. Cut into bars or squares. Store in an airtight container in the refrigerator.
